These chana dal-vadas are primarily made with lentils, soaked dal, and a handful of simple spices.
The main ingredient is chana dal.
Masala vadas are made from chana daal (split chickpeas). It is essential only to soak them for 1.5 hours. The dal will become too soft when it is ground and will not be crispy. Chana dal, a staple Indian meal, has a meaty texture that is dense when cooked. This makes it perfect for making chana dal vadas.
The spice mixture

These spices can be ground to a fine powder using a small container of a mixer grinder, a coffee grinder, or a spice mill. Because each element gives the recipe texture and crunch, you’ll notice that everything is coarsely ground. These are the spices that you will need:
- Whole Cinnamon (dalchini).
- Cumin Seeds (jeera)
- Fennel Seeds (saunf)
- Whole dried Red Chillies

These are some tips and tricks to make the best vada. These were tested to ensure that each bite was crunchy.
Chana Dal Soaking Time The ideal time to soak chana daal is 1.5 hours. The dal will get soggy if it is left to soak for longer.
Making Chana Dal: All Indian spice grinders come with a little spice mix. This is only for grinding the chana daal. This jar is designed for grinding spices, chutneys, and pods. It only requires water as much as the blender or wet grinder. You can grind the chana daal until it is a fine mixture without adding water. We want the whole chana daal, so keep going if there are still bits!
Forming the Vadas: Form the Vadas into flattened discs of 1/4 inch in thickness. If the vadas are thicker than this, it’s possible that the inside will not cook properly.
Deep Frying Masala Vala: To fry these crisp vadas, heat oil and let them sit for about 2 to 3 minutes. This allows the outside to cook evenly, so the vadas don’t break while frying. To allow them to brown evenly, fry them on medium heat. The insides of the meat will not cook if the heat is too high. They take 10-12 mins to fry until they turn a deep golden color.
Instructions
- Repeat the process until the water runs clear. Transfer the chana daal to a bowl. Add enough water to submerge it completely. Allow it to soak for at least 1 hour and 30 minutes. Drain all water once it is absorbed. Drain as much water as possible, as too much water will cause a wet mixture.
- In a chutney container, combine all ingredients listed under “dry masala.” Blend the mixture until it is a fine powder. Mix the masala mixture in a bowl. Keep it aside.
- Half of the drained and soaked chana dal should be added to the same chutney container. The jar can be left alone. Blend until it becomes coarse. Refrain from over-grinding as it may cause the mixture to be too loose for vada making. You can see small pieces of the whole chana daal. Transfer the first batch to a bowl. Next, add the second half. Transfer to the bowl once you are done.
- Mix the dry masala, mint, green chili paste, onion, green chilies, turmeric powder, garlic paste, and salt in a bowl. Mix it with your hands until well combined. To make vada, shape them into small balls about the size of golf balls. Then flatten them with your hands. Make sure they are tightly shaped, so they don’t fall apart when frying. Keep aside.
- For frying, use a kadai (or a heavy-bottomed pan). Allow the oil to heat up by adding about 1.5 inches. To check that the oil is hot enough, add a small amount of the vada mix to the pan. The oil is too hot if the vada does not float to the top. The oil may be too hot if it browns too fast. To ensure that the inside of the vada is cooked evenly, it must be cooked on low heat.
- When the oil has melted, add as many videos to the pan as possible in one layer. The videos will start to separate if you move them around after adding them. Don’t crowd the pan. Only fry a few at once.
- The vadas should be fried for 10-12 minutes over low heat. Turn the vadas halfway through to brown evenly on both sides. To drain excess oil, place the pan in a colander or on a piece of kitchen tissue. Serve immediately.
