Hmm. Sabudana (sago), is a complex flavor. It’s either a favorite or a fav. With a cup of chai, sabudanavadas are delicious. This recipe is a real treat! We made it even more delicious by filling the sabudana vada with paneer! You can easily skip planning other dishes and focus on this dish.
This recipe has been in my testing for months so I could post it in time for Navratri. If there is one fast food dish that always finds a spot, it’s sabudana vadas.
Sabudana can go wrong if it needs to be prepared correctly. Sabudana Khichdi has been almost impossible to eat. It can be either too sticky or raw sabudana pearls. I’ve also had sabudanavadas that burst when I deep fry them.
Here’s how to make sabudana vales. It’s easy! You’ll also find all my tips and tricks, from properly soaking the tapioca pearls to making the vada mixture and how to stuff them, and finally, how to fry them until they are crispy and don’t absorb too much oil.
How to soak sabudana right
Many people soak the sabudana for only an hour before they cook it. It’s essential to wash the sabudana overnight to ensure the right texture. The sabudana should be soft enough to eat and chewy sufficient for you to enjoy it. These are some tips to assist you in this process.
- Rinse the sabudana pearls. Use water as the soaking liquid. It should be evenly spread on the sabudana. It should be 1:10. Only enough water is required to cover the sabudana adequately. Sabudana that is too wet will become excessively sticky.
- You’ll only go back to this method.
- You should only use as much water as you need. Otherwise, the frying process can become messy. Stick to the ratio.
- Once the pearls have been soaked, rub a few of the sabudana pearls with two fingers. If they are still a bit hard inside, you will need to soak them for longer. You should be able to mash them between your fingers.
If the sabudana pearls aren’t properly soaked, they can burst during frying. !
The paneer filling
I understand what you are thinking. Sabudana already weighs a lot. What about stuffing it with paneer instead? Before you freak out, lemme tell you. The paneer filling in this recipe is light, moist, and soft. The sabudana vada is a great way to add more flavor and texture. The soft paneer complements the crunchy vada. How to make the sabudana va
The hard part is mixing the ingredients. The trickiest part is the stuffing of the Vats.
- Make sure the sabudanavada vada mixture is dry enough. It must be just right to coat paneer.
- It would help if you covered the paneer with the sabudana mix evenly.
- Make sure the vada patties have been stuffed.
Three ways to cook this sabudana-tikki:
- You can use the OG method and deep fry them in oil over the stovetop. This is how our grandmothers and moms made our mouths water. The oil temperature should be medium heat. This will ensure that the vadas don’t absorb oil and are crispy on the outside. It will also give the vadas a pleasant mouthfeel.
- Bake these if you are a dieter. You will need to lightly brush the vadas with oil or butter 2-3 times during baking. Bake the vadas for 10 minutes in the oven at 220°C. Put oil on the vadas, turn them over, and bake for another 10 minutes. Please turn on the grill and grill the vadas until they are crispy and golden brown.
- Air-frying is the newest technique. It is quick and extremely healthy. These videos can be made in an air fryer. They will crisp up in a matter of minutes.

Ingredients
1 cup Sabudana/Tapioca Pearls
1 cup water to soak Sabudana
4 Boiled Potatoes
Finely chopped 3 Green Chillies
One teaspoon of Jeera Cumin seeds
1 cup roasted Peanuts Skin removed and ground
8-10 finely chopped curry leaves
Two tablespoons chopped Coriander
One teaspoon Jeera Powder ground Cumin
1/2 teaspoon Sugar
1/2 teaspoon Chilli Powder or Paprika
One lime juice
1 1/4 teaspoon salt
2 cups oil for frying Ghee/ Canola/ Rice Bran/ Soybean
The stuffing
150g Paneer/ Cottage Cheese, drained
1/2 teaspoon Jeera Powder ground Cumin
1/2 teaspoon Chilli Powder or Paprika
One tablespoon of chopped Coriander
1/4 teaspoon salt
Instructions
- Use a sieve to wash the sabudana in water. For 6-8 hours, soak the washed Sabudana in 1 cup of water. You can test if the sabudana has been absorbed by pressing one pearl between your fingers. It should then mash easily.
- Make the sabudana mix by mashing potatoes with peanuts, green chilies, and coriander. Combine all ingredients.
- The filling is made by adding paneer and jeera powder to a bowl. Mix it all together with your hands. Make small, lime-sized balls from the paneer mixture.
- Make sabudana vale bombs by soaking your hands in water. Place a golf-ball-sized amount of sabudana mix on your palm. Flatten it. Place a small pane mixture in the middle and press it around the edges to cover the ball. To form the sabudana vale, place a small amount of the sabudana mix on top. Continue this process until all the sabudana vales are created.
- In medium heat oil, fry the vadas until golden brown. Serve immediately
